Rosemary Roasted Potatoes

I love potatoes for their comfort food quality, the way they can make a cold night seem that much warmer. I especially love this recipe for the colorful array of petite potatoes and the addition of flavorful fresh carrots and fragrant herbs like rosemary and oregano.

Before roasting the potatoes are gorgeous: and vibrant with color:

Ingredients:

  • petite multi-colored potatoes
  • 3 carrots, slice crosswise
  • 2 tablespoons butter, melted
  • 1 teaspoon dried rosemary
  • ½ teaspoon dried oregano
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • ⅛ cup shredded Parmesan cheese
  1. Preheat oven to 425℉.
  2. Quarter potatoes and place in a medium baking dish. Mix in sliced carrots.
  3. Drizzle the melted butter evenly over potatoes and carrots, add rosemary, oregano, salt, and pepper, stir well.
  4. Bake for 35 minutes, stirring and rotating baking dish halfway through.
  5. Add Parmesan and stir, bake for an additional 15 minutes.
  6. Remove from oven and allow to cool for 8 minutes before serving.

After roasting, the potatoes are delicious, although not as colorful as before:
