French-Trimmed Rack
In the "Lunch with Lions" video I did with the folks from Mockford Pork a few weeks ago, Gourmet Girl showed me what to do with her rack so that remains tender and tastes juicy :P
We didn't show everything on camera, as the focus was more to promote the launch of the Flying Pig Luxury Pork Box at the time, so yesterday we filmed some of the tips she shared with me.

I brine my pork roasts before cooking them....
That is a popular option... especially to get crispy crackling... but you'll see when the video comes out: luckily when you have a braai, just pop them skin side down for a few moments directly over the coals, and it crisps up beautifully.
Lots of salt on rind once cut into bite sizes, snap, crackle good @braaiboy look forward to the secret.
