Citrus Jelly with Yoghurt

🔸️1/3 cup reduced-fat Greek natural yoghurt
🔸️1 tablespoon mint leaves, chopped
🔸️1/4 tsp orange zest
🔸️1 & 1/4 cups orange juice, freshly squeezed
🔸️1/4 cup powdered gelatine

Combine yoghurt, mint and orange zest. Place in an airtight container in the
fridge.

Place orange juice in saucepan over a medium heat.

Once simmering, add the gelatine.

Stir until dissolved.

Divide the juice mix evenly into 4 silicone/jelly moulds or cups and place in the
fridge to set, around 2 hours.

Serve jelly with a spoonful of the yoghurt mixture.

Leftovers can be stored in the fridge for 4-5 days.
