Steemit sandwich contest week 39: deconstructed taco

Today I feel like doing something very different. I am going to make a deconstructed taco. taco is technically counted as a sandwich, deconstructed taco is too. however in practical it not a sandwich, as one of the main thing a sandwich must have is it must be eaten with one hand. As everybody knows, taco is a Mexican cuisine. For me, I am not very familiar with Mexican cuisine and to make matter worst I never eaten Mexican food before! Funny thing is earlier today, I was making some Mexican salad and there was plenty leftover.i was thinking, Mexican cuisine contain a lot bright and vibrant ingredients, which reminds me of Spring so of Course throwing it away would be a waste at is why I decided to make a decontracted sandwich for ssc. I'll explain more about it but first...

I present to you: decontracted taco

Corn bread crumb; queso quesadilla chips; mixed vegetables salad; yogurt, sweet corn, chile sauce; hot and sour sauce; chicken stuffed pumpkin purée roasted in corn husk; coriander oil; roasted baby corn.

Ingredient

Yogurt, corn and fermented hot sauce

To me this sauce is essential to the final dish, it ties all the element together. The yogurt contributes to the milky tanginess. The corn for the frangants and sweetness. The fermented hot sauce for the spice, it's made from Birdseye chille( Mexican chille are hard to find here), apple cider vinegar, sea salt .

We have the roasted pumpkins, roasted sweet potato, roasted carrot and boiled sweet corn.
I decided to roast the vegetable to intensify and bring out its natural sugar. As for the corn, I kept it simple by boiling it to retain its fresh flavour with making it sweeter.

Tomato by its own is nice, but I want to make it a WOW element. I marinaded it in agave nectar, Apple cider vinegar, tequila, thyme and sea salt. The end product is a punchy sweet and sour thyme-mee flavoured tomato.

coriander oil

Just for an extra layer of flavour, it's made by pounding it in a morta and pesto with seasalt, coriander leaves and oil.

I have grated the cheese in a round shape mold and baked it in a over until slightly colour and very crispy. This adds a nutty cheese flavour and a crispy texture, it's also a inspiration from The traditional cheese slice and the taco shell.

There are two reason I did this. First is that when corn husk is expose to heat is releases its flavour compound which perfumes the chicken. Second is to protect the delicate chicken breast from intense heat, which helps prevent the breast from drying out.

Baked corn
I forgotten to take a picture of this, sry. But it's pretty straight forward, just roast it with the chicken until almost charred.

Building the" sandwich"

1. Spread a layer of the yogurt sauce and pipe a line of sweet and spicy sauce.

2. Place a layer of corn bread crumbs in the middle

3. Arrange the stuffed chicken nicely in a pattern

4. Add some mix vegetable and coriander oil at the side of the stuffed chicken

Lastly add the baked baby corn on top the stuffed chicken and garnish with coriander leaf

Holy fuck bro.... I hope you're opening up your own eatery someday. Your pieces always look so fantastic not to mention they are totally bizarre but in a good way. Very distinctive creative juices flow within you! IF you opened up a small place in Toronto, you'd be killing it bc nobody does this to the degree you do that I've see so far :)

Nice job on all the homemadeness of this one! Wrapping it up and Cooking in the "maize" skin was particularly interesting to me.
