today's sandwich: CHEESE Molten Lava Bun

Stuffed with minced meat mix and garnish with crispy maple syrup bacon oats crumble

This bun was made with flour, milk, sugar, salt, and yeast

First, I rolled out the dough into a long rectangle and then neatly place the minced meat mix at the center. The minced meat mix consist of minced pork belly, onions, garlic, soy sauce, sugar. I simple stir fried it and cooling it before using it as stuffing.

Next pinch the long edge of the rectangle together to seal the filling

Combine the both ends together to form a donut. Let it raise at room temperature before baking. Before entering the oven, coat the donut with egg wash.

This is the baked donut stuffed with minced meat mix.

TOP LEFT: MAPLE SYRUP BACON OAT CRUMBLE

Okay, first of all who don't love maple syrup and bacon? To me sweet and savoury combine together creates a combination made to be addicted to. I could have made a regular crumble with flour, but instead I used oat. Since it's already so unhealthy, I just feel less guilty if I add a healthy ingredient which in this case is oat. Beside that, the toasted oat gives a lovely nuttiness. In this crumble, I used bacon fat to flavour the crumble instead of the meat simple because I used all of them without realising.

First I heat the bacon fat on low heat to render the smoky oily goodness from the bacon fat. Next I lights toast the oats. Once I can smell the nutty aroma, I add maple syrup which will form cluster of cumble.

MIDDLE: MILKY VELVET TWO CHEESE SAUCE

ingredients in this cheese sauce includes: citric acid, sodium bicarbonate, full cream milk powder, milk, European butter, BLUE CHEESE, cheddar.

You may realise the unusual ingredients I used to make the cheese sauce, the citric acid and sodium bicarbonate will react to form sodium citric which helps my cheese I add into the milk to NOT separate. Without it oil will start to float onto the surface once it's heated. As for the full cream milk powder, I add that instead of roux is to intensify the milky flavour. In this recipe I also used European butter instead of regular butter mainly because European butter has a fermented flavour and higher fat content which contributes to flavour. And lastly blue cheese, just to give that funkiness.

MAKING IT INTO ONE

1. Pour the cheese sauce starting from the middle, pour until it overflows and cover the entire surface of the donut.

2. Garnish with slice spring onion and maple syrup bacon oat cumble

just for those who are curios what does the inside look like. Thin layer of dough with lots of stuffing! Some people like it this way.
