In the heart of the majestic Drakensberg mountain range, lies The Valley Bakery, a little gem in the Champagne Valley.

The bakery is situated in a sprawling old farm house and was started by the women of the farm who were testing the stone ground flour from the farm's mill. This now is a very successful and busy little bakery and cafe that supplies the surrounding hotels and resorts with specialist breads and rolls as well as delightful pastries and other confectionery.

Champagne Valley Stonemill's flour is GMO free, unbleached, contains no preservatives or additives and bakes beautifully, so I always take a couple of bags back home.

Their artisan bread is to die for and on our recent stop back home after an idyllic breakaway with friends, the loaves were still piping hot and the car smelt like a bakery all the way home.
Needless to say, we could not wait to tuck in when we finally reached home, spread with thick layers of farm butter it was pure heaven!

Before we get to my sandwich, I'd like to tell you about an alarming study that proposed that Gluten is not the real culprit in Celiac disease, but rather Glyphosate, the active ingredient in the herbicide, Roundup®, which is used to spray wheat crops just before harvesting, a shocking and common practice by wheat farmers.

Following that study, The Healthy Home Economist, says:

Common wheat harvest protocol in the United States is to drench the wheat fields with Roundup several days before the combine harvesters work through the fields as the practice allows for an earlier, easier and bigger harvest.

Another factor is something Michael Pollan of the Netflix food documentary suggested - people who believed they were gluten intolerant would probably not suffer any adverse reactions if they were to eat sourdough bread made the old fashioned way such as by a baker named Richard Bourdon in rural Massachusetts, who explained the importance of proper fermentation of grains to aid digestion.

I apologise for taking up so much of our sandwich time here with my confusion as to why gluten intolerance has exploded to such an extent, but I do love a good loaf of homemade bread and thought this to be valuable information!

So back to my sandwich of the day - Smashed Sardine Artisan Sandwich.

INGREDIENTS

  • 2 slices Artisan bread
  • Real farm Butter
  • 1 can Portuguese Sardines in Tomato Sauce
  • Half an Onion - diced and sliced in half rounds
  • 1 small Tomato - diced
  • Lemon rind and juice of half a Lemon
  • Cheddar Cheese - finely grated
  • Tabasco Sauce
  • Basil Pesto

1. Spread a liberal layer of Butter on bread

2. Top with Cheese

3. Smash sardines, add diced Onion, Tomato, Lemon Rind & Juice as well as Tabasco Sauce

4. Pile on top of Cheese

5. Top with half Onion rings and Pesto and tuck in!

Oh my that looks good, and I really like the idea of my car smelling like home baked bread. Ohhhhh.

I'd not read that about Roundup but it makes a certain sort of sense to me. I grew up on a wheat farm and I didn't know a single person that was sensitive to gluten until the last 15 years or so.

That said, it is a not uncommon practice, but not all farmers use Roundup pre harvest. They use it when they have a weed infestation that will prevent them from harvesting. Roundup is not cheap and most wheat farmers live on a razor thing profit margin so don't do things that they don't have to do.

I will say that there would be enough of the practice to allow for a general sensitivity in all flour. Interesting stuff.

Thank you for that interesting feedback @bigtom13, I just find it weird how everywhere I go, more and more people are gluten intolerant! Nothing beats hot homemade bread and a thick layer of butter! I generally don't eat much mass produced breads so maybe it's also got something to do with them speeding up the process?

wow @lizelle, so creative! I haven't eaten sardines, but I bet they are great paired with pesto and onions. Didn't know this information about the wheat contamination...my daughter is seriously gluten intolerant. It's crazy to think that may be why! Thanks for sharing that information. Fresh bread, with butter....mmmmmmm, made my mouth water :)

Sardines have a very intense flavour, is quite an oily fish, but really delicious especially with all these ingredients! It's high in Omega 3's as well.
I was shocked to read about the wheat spraying and am convinced it's the main culprit in the States, all kinds of chemicals are used everywhere in the world as well!

Love the bit about this awesome bakery and their amazing bread. Also the info on gluten free was informative. In general wheat from 30yrs ago is not the same wheat we eat today. It’s been gmo’d as well as the herbicides drenching it.

Back onur sandwich. Love the collection of ingredients and the flavour combos being produced by them.

Very interesting post, I love the infromation on gluten. Sad to think most diseases are created by chemicals made by people. Love that you promote healthy food sources.

howdy from Texas lizelle! oh my, this is such an educational article in two different ways! First the Roudup information that I didn't know about, very interesting.
And then the charming and natural bakery that you have there, I wish we had one like that close to me! The sandwich looks amazing and I think it's safe to guess that it tastes that way too. lol. Great job! I'd be at the bakery every week!

I was shocked to read about that as well @janton! That bakery unfortunately is not close to me, we were on holiday at the time. May just be a good thing or I'd be the size of a house, their baked goods is so delicious!

Those look real tempting, but I would go for the hot bread and farm fresh butter. I guess because I am just a plain and simple old man.
