Steemit Sandwich Contest Week #48 - Beans Bunny

Here in the southern hemisphere, in South Africa to be precise, we are in the midst of winter. Durban is my hometown and I've told you all about our gorgeous mild winters, but I had to fly up to freezing cold Johannesburg unexpectedly, and my fingers are slowly freezing up whilst I'm doing my post.

There's nothing as warming as a spicy hot Curry on a cold winter's night, so I am making a Three Bean Bunny Chow aka Beans Bunny not only to warm our bellies, but also as my entry into Steemit Sandwich Contest #48

I told you all a couple of sandwiches ago about Durban's famous Bunny Chow and made you a spicy ground Beef Bunny, but this time I bring you a Vegan version, filled with spicy Beans, deliciousness hidden inside a mini loaf of bread!

A quick recap; Bunny Chows are synonymous with Durban, should you ever visit our city, do not leave without ordering one of these. Beware though, it will be hot hot hot and has to be shared with friends.
Basically it is a hollowed out loaf of bread filled with a spicy curry and eaten without cutlery by breaking off pieces of curry soaked bread to scoop up the curry.

Legend has it that Bunny Chows originated when migrant Indian sugarcane workers needed a container to carry their lunch to the sugar plantations, and a hollowed out loaf of bread was ideal to hold their vegetarian curries. The cut-out piece was used to make a lid.

Quite ingenious to say the least!

Ingredients required for an almost instant Beans Bunny:

  • Spices: Curry Powder, Garum Masala, Turmeric, Cloves, Cinnamon stick, Curry leaves
  • Crushed Garlic & Ginger
  • Small Onion, diced
  • Tomatoes, diced
  • Baby Potatoes, parboiled
  • 1 can each Red Kidney Beans, Butter Beans & Black Eyed Beans - drain most of the liquid
  • Fresh Dhania (Coriander)
  • Mini Bread

Sautee spices, Onions & Garlic & Ginger in a little oil.
Add Tomatoes and Potatoes and cook about 5 minutes.

Add drained beans and simmer slowly for about 20 minutes.

Cut off top of bread to make a lid, then hollow out the bread to make a basket for the curry filling.

Thanks for another interesting recipe. I hope those beans don't make the bread too soggy.

That's the best part @slobberchops, all that delicious gravy soaks into the bread, but I must admit I still eat it with cutlery, cannot do the tuck in with hands thing, probably never will. My Indian friends laugh at me eating a Bunny Chow with a knife & fork ;)

Haha @jaybird, poor bunnies, they're not meant to be inside bread :) Still not sure why they call this a Bunny Chow, maybe they did use bunnies back in the day? Will ask granny Google ;)
