Sausage And Meatball Casserole + Recipe - A Hearty And Yummy Meal For A Rainy Day !
I didn´t mean to cook this dish today, I was planning to cook the chicken paprika... but then I had some leftover veggies from the last buying.... so I improvised and thought of making meatballs as highlight meat and a couple of Debreziner sausage that is a bit hot. It is raining a bit in our area, so this might be good for lunch. Following Oma, granny´s principle not to waste any food, I gathered all what I had in the fridge and started cooking. I would normally add pork chunks but I decided on the meatballs to somehow give a twist to the ingredients. Almost all Wiener ( viennese locals) eat sausages.. there are hundred varieties of austrian sausages and I will sometime make a blog on that later on.
Before I give the recipe on the casserole, let´s do the meatballs first so that they are ready by the time the casserole cooking is about to finish. Here I have tried another method of making the meatballs. This is a recipe of grandma and it is so easy to make in just a couple of minutes you are ready to fry or roast them.
MEATBALL RECIPE
Ingredients
500 grams of ground beef/pork (50/50 mix)
1 Egg
2 tablespoons breadcrumbs
1 teaspoon mustard
1 teaspoon tomato paste
salt and pepper
cooking oil
Preparations:
In a mixing bowl, combine the meat, the egg, breadcrumbs, mustard and the tomato paste and season with salt and pepper. Using your hands, spoon the combined ingredients into your palm to form the meatballs as you go and place them on a platter ready for frying. In a hot pan with 2 spoons of cooking oil, fry the meatballs til all side are golden in color. Set aside for later use.
CASSEROLE RECIPE
Ingredients (Serves 4)
1 pair of Debreziner or any other sausage you like
1 medium onion
2 garlic cloves, crushed
5 medium potatoes cut into bite size
4 carrots, cut into bite size
Bell peppers (red and green) , cut into bite size
about 10 green beans cut into halves
1 zucchini , cut into bite size
1 handful chopped parsley
a few pieces of cut green asparagus
2 tablespoon tomato paste
1 tablespoon sweet paprika powder
1 liter of vegetable stock
salt and pepper
soy sauce (optional)
cooking oil
Preparation:
1... In a deep casserole, fry the garlic , add the onion, stir fry til onions get pale or are brown in color. Add the cut potatoes and the carrots, add the tomato paste and the sweet paprika powder. Add the vegetable stock and let cook for 3-5 minutes or til carrots and potatoes become soft.
2...Add the rest of the vegetables including the cut pair of sausages, let boil, then simmer for about 5 minutes or til all ingredients are soft. If the liquid has evaporated , add a bit more water. Then add the meatballs to carefully combine them with other ingredients. Season with soy sauce (optional), salt and pepper. Adjust seasoning according to your taste.
Serve hot right after cooking. Can also go with white bread or baguette, since potatoes and carrots are already in this dish... it all depends on how you would like to add the bread or not.
