Kitchen Witch Sundays - Peanutbutter Cookies
This is basically the recipe for my grandmother's peanutbutter kiss cookies but minus the rolling in sugar and some chocolate in the middle and plus my homemade jam. They're also just really, really good on their own!
You'll need the following;
- 2 sticks of butter at room temperature
- 1 cup of powdered sugar
- 1/2 cup of peanutbutter
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 cups flour
I included a picture of my homemade jam from last week, which I actually made just so I could put them on these cookies.
Honestly, for once I don't have much to say here. The ingredients are pretty straightforward, you can sub with vegan ingredients if you want to, and beyond that it just is what it is.
Start by creaming together the butter, powdered sugar and peanutbutter until it's well incorporated.
Add in your eggs, vanilla and salt and mix again until it looks smooth. It should be very liquid-y, we'll fix that in the next step.
Add in your flour and mix again, and now you've got a proper dough going!
Once it's all mixed, put it in the fridge and leave it 2-3 hours minimum but preferably overnight.
Preheat your oven to 350 and put your dough on a well-greased sheet. Any dough you don't get to right away should be put back in the fridge.
I used a cookie scoop because they will retain this general shape. You can roll it out thin and use cookie cutters or use a scoop and flatten them a bit if you prefer a more traditional cookie shape.
Bake these guys about 15 minutes or so, until the bottoms are just getting to be brown as shown.
And then bam, you're done! I like to put a little jam on the flat underside and eat them in one bite, they're pretty much bite-sized. A little extra peanutbutter on them would be good too, or like I said before they're great just plain.
I took a bunch, and an extra jar of jam, to the lady across the hall from us becuase she's super nice and often gives us spare vegetables she gets her hands on that her kids won't eat. She remarked that they'd be great with her morning coffee, and if it were colder out they'd also be super good with tea. So they're good year round, no matter how you decide to eat them!
