今日は「スパイス=辛い」これは間違いのお話しです。

日本には、そもそもスパイスというモノや概念がありませんでした。今でこそ浸透してきていますが、少し間違ったように認識されているのかな、と思います。そう感じたのは、自分自身、諸外国の歴史を知ったり、使い方を知ったからです。


東南アジアでスパイスが普及したのは、多くのスパイスの原産地だからということがあるでしょう。ヨーロッパで広く普及したのは、歴史的な背景などがありますね。
東南アジアやヨーロッパは、土地が広く、その昔は新鮮な食材が手に入りませんでした。そのため、

  • 食材の防腐剤
  • 臭み消し

のような用途でスパイスを大量に消費していたのです。

一方の日本はというと、土地が狭く新鮮な海山の幸を入手できやすい環境にあるので、防腐などの必要がありませんし、日本の食事は魚介や野菜が中心で、その味を活かすものが多いので、食材の味を損ねない程度の隠し味や薬味で使われる、いわば添え物のような使われ方です。

スパイスに相当するものが、昔の日本では、「薬味」。この薬味には、

  • わさび
  • 山椒
  • 生姜
  • ネギ

など
辛いものが多いです。
このため、日本では「スパイス」=「辛いもの」と認識されてしまっています。
しかし、これまでに紹介したスパイスの中にも、甘い酸っぱい苦いなど、辛味以外のスパイスがたくさんあります。
実は、世界で使われているスパイスのうち、辛味のあるスパイスは1割もないそうですよ。。
スパイスを訳すと「香辛料」となりますが、その言葉にも囚われてしまってますよね。

薬味大好きです。文字を見るだけで美味しそう〜。文字をみて匂いが浮かぶスパイスってステキなことですよねー。今度アジア食品店でもしあれば山椒を買いたいと思いました^_^

確かに、、薬味に書いたモノは、香りや味が思い浮かびますね~、そんなに頻繁に食べてるわけではないのに('ー')/~~

いえいえ、そんな。私もまだまだ勉強会中です。。何気なく使ってるスパイスも意味や効能知るだけで随分と幅が広がって楽しくなります(^-^)

スパイスは、辛いイメージを持ってる一人です。
辛味のあるスパイスが1割しかないのに、辛いイメージをもつってある意味珍しいですね笑
甘いスパイスとか気になります。

シナモンや、カルダモンは甘味ですね。コーヒーとの相性もいいですよ~(^-^)

日本人の認識は少し違うんですね。

そうなんですよね~。日本では、色づけや味付けの用途が大きいのかな、と感じる今日この頃です。

確かに「スパイス」を日本語に訳すと「香辛料」ですよね。
私が先日、スーパーで発見したスパイスは「Marjoram leaves」 でした。調べてみるとオレガノの仲間らしいです。^^

マジョラムですね~。大事なスパイスですね!!スパイス講座にしっかり入っているので、いずれ説明します(^-^)
