【Vicky's 小确幸】Spicy Crayfish 麻辣小龙虾

When it comes to summer, the food firstly comes into to my mind is Spicy Crayfish with Cold Beer (AD: when it snows, remember to have [Beer with Fried chicken] (https://cnsteem.org/beautifulsunday/@nostalgic1212/vicky-s-beer-and-fried-chicken)). It's definitely a huge pleasure to have them in the hot summer. However, Vicky's digestive system really do not function well. If I go out to have a meal, it'll generally ends up with gastrointestinal discomfort. As a good foodie, let's do it by ourselves. What I'm going to do today is: Spicy Crayfish.

Ingredients: Crayfish, Scallion, Garlic, Celery, Parsley, Sichuan Pepper, Dry Red Pepper, Star Anise, Rock Sugar, Soyabean Paste, Salt, Oil and Water.

Methods:

1、I prefer to remove the whole head of the crayfish and carefully clean the body part with a toothbrush;

2、Cut scallion and celery into sections, slice some of garlic and flatten the others;

3、Add some water and salt to the pot;

4、When the water is boiling, pour the crayfish that has just been processed. When it changes color, take it out of the water immediately and put it on the plate;

5、Put oil into the pan. When the oil's temperature is high, add dry red pepper, garlic slices. After that, put in the soyabean Paste, sichuan pepper, celery, rock sugar and keep stirring;

6、Pour in the crayfish and stir-fry them. Turn the fire to the maximum mode, add some water and salt to adjust the flavor;

7、When the sauce shrinks, put in some of the scallion/parsley before coming out of the pot;

8、Done!

Tips:

  • To wash the crayfish thoroughly;
  • Do not add too much water, which will influence the taste.

说到夏天,Vicky我首先想到的就是麻辣虾龙虾配上冰镇啤酒(场外插播:下雪了记得要吃啤酒炸鸡唷📢)简直不能再安逸了❤️不过勒,Vicky的肠胃真的不属于特别健康的那类,一般来说去外头吃都会出现饱了口福结果…遭殃的情况。作为一个合格的吃货,咱们就自己动手咯💪今天我准备做的就是:麻辣虾龙虾😋

材料:小龙虾、葱、蒜、香芹、香菜、花椒、干辣椒、八角、冰糖、豆瓣酱、盐、食用油、水

做法:

1、我处理小龙虾的方式比较彻底,会将整个头部去除,身子的部分用牙刷仔细刷干净(妈妈经常笑我烧烧半小时,吃吃五分钟,处理这个过程起码一小时😂);

2、葱和香芹切段,蒜一部分切片另一部分拍扁备用;

3、在锅内放入水,加入少许盐;

4、待水沸腾后倒入刚才处理好的小龙虾,变色后立刻捞出装盘备用;

5、放油入锅待油温升高后,放入干辣椒、蒜片爆香后,依次放入豆瓣酱(不喜欢的或者有痛风的小伙伴也可以选择pass这个)、花椒、香芹段和冰糖,翻炒一下;

6、放入小龙虾,将小龙虾炒匀后转大火并加适量水(一般没过小龙虾一半位置就好),撒入盐调味;

7、待汤汁收缩,撒些葱段/香菜即可出锅;

8、搞定!

注意:

  1. 要将小龙虾彻底洗干净,不要嫌麻烦;
  2. 加水的时候千万要适量,过多的水会导致汤汁寡淡(麻辣小龙虾就是要入味才好吃嘛!)
