MEXICAN TACO SOUP

This Mexican Taco Soup is so good and simple it can be made quickly on a weeknight for the entire family dinner.This soup is so great and healthy. It is so much better for you and your family than any takeout meal.

Shopping List

1 teaspoon olive oil

1 medium onion diced up

3 cloves of minced garlic

1 diced red bell pepper

1 pound of ground turkey or lean ground beef

10 oz of your favorite salsa

1 can of diced tomatoes

1 taco seasoning package

1 can of black beans

1 can of kidney beans

1 package of frozen mixed veggies

32 oz of chicken stock....Make it yourself it is really worth the extra time.

1 lime juiced, or 2 tbs

Directions

Pour the oil into a large pot. after the oil is heated dump in your red pepper, garlic and onion. Saute it all for 6 to 8 mins until soft and nicely browned.

In a separate pan cook your meat until well browned and then drain off the fat.

Toss your browned meat into the pot with the saute mix. Add the salsa, tomatoes,taco seasoning, beans and the veggies. Pour in the broth.

Git it boiling and then reduce heat to a simmer for 30 to 40 mins. Just be for you serve it up add the lime juice.
