Homemade Cod fish fingers

Cod is an excellent source of vitamin B12, selenium, phosphorus and protein. It is also a very good source of choline as well as a good source of niacin, potassium, vitamin B6, molybdenum, pantothenic acid and omega-3 fatty acids.

Get a nice piece of fresh Cod, lets say 200 gramm per person

Make the coating by -gently using your fingers or a wooden spoon - covering the fish pieces with flour first, then beaten egg, finally breadcrumbs using separate plates. Add some salt and a pinch of tarragon (or any dried green leaves) to the eggs before stirring.

Heat the vegetable oil to 180°-200° Celsius (360 °Fahrenheit), and drop the pieces into the oil.

After a few minutes, when the coating become brownish, remove the fish fingers, place them on a kitchen paper to remove the excess oil, and decorate with some fresh green leaves, I've used parsley from my kitchen garden.
