My home-made double dipped Jalapeno Poppers

I posted a photo of some of my freshly harvested Jalapenos yesterday and now its time to show you how to make them extra yummy.

To be honest I could have used more cheese but I'm kinda on a budget right now but they were still super yummy

So as I said these are my home-made double dipped poppers, here is what you'll need (All ingredients are depending on the size of your Jalapenos, oil pot, it's a pretty free style recipe):
  1. Jalapeno's
  2. Cheese (mozarella/cheddar/cream/cottage/processed)
  3. Flour
  4. Salt
  5. Pepper
  6. Baking Powder
  7. Oil
  8. Beer (The more the better)

So let's get to it!!!

Step 1

Open the beer and make sure it's fresh and ready to make some great poppers!!!

Step 2

Now that we know that the beer is good, start cutting open those Jalapenos. I like to use both shells. So I start by making a half cut below the stem and then a vertical cut all the way down splitting it in two.

Then remove all of the seeds to make some space for that yummy cheese and fill them up.

I did a mixture of chunky cottage cheese and cheddar.

Step 3

Close them up and put them into the freezer while we start on the batter. (This is a good time to get the oil going so that it's heated up when the batter is ready).

Step 4

The batter, to know how much beer to put in just take a sip again to make sure it's fresh. Then add some flour, pepper and salt into a bowl. The amount will be determined by the amount of Jalapenos you want to coat. I did about 12 small/medium sized Jalapenos and used a cup of flour and a teaspoon of salt and 2 teaspoons of black pepper. Don't worry if you have batter left, they make for great pancakes :)

Step 5

Add beer and start to mix, you want to add beer until the batter starts looking like a liquid but still sticky. If you lift up you mixing tool the batter should drip down but still stick to the tool and then you are ready to get those guys in the oil.

Step 6

Start by dunking the poppers into the batter and then drop them into the oil (The hotter the oil the better). This might get messy so if you don't like getting your hands dirty, I'd advise using a spoon for dunking the poppers and putting them into the pot of oil.

The oil was burning the midnight oil so I couldn't get a shot of putting them in, but I'm sure you can figure that out. When the batter has turned to a nice brown crispy colour put them on a piece of kitchen towel to absorb excess oil.

Step 7

Here is the magic of that double dip, I love beer batter so I always need more hence the double dip. Once all of your poppers have been in the oil once, then take them and repeat the process and there you have it the softest, yummy poppers, a treat for all days.

Those look super yummy, @p1eter. You could do that with other veggies, too for those who don't like to shower upside down!

Hehehe yes you can, but I, myslef love the upside down shower :)
