Gigi Pizzeria, Newtown. [Sydney Vegan Eats][One Pizzeria to Rule Them All][SteemitWorldMap]

A snaking queue from the entrance and around the corner is not uncommon at Gigi Pizzeria. It's as if the carbonaceous aroma snuck out from beneath the door and transformed into thirty salivating customers desperate for any seat available.

Simplexity of Pizze.

Dough and toppings, right? We are not talking about sinking souffles here.

Not exactly.

If you've ever made a pizza at home and you thought you'd have a crack at cooking in your own woodfired oven, you've probably burned more bases than you care to admit. I'd be extremely reluctant to compare even those home cooks who swear by mammas recipes and their own experience, anywhere within radiant heat distance of Gigi's pizzaiolo (pizza makers).

Associazione Verace Pizza Napoletana.

If you're a member of the "True Neapolitan Pizza Association", it speaks volumes for the quality of your pizza and the dedication of your establishment. The Associazione pride themselves as defenders of traditional Neapolitan pizza. Among other things, pizzas must be made according to specific guidelines, from production methodology to the qualities and quantities of ingredients used.

Gigi's are one such member. To be honest, I feel as though Gigi's generate as much interest in the AVPN as AVPN bolster the credibility of accredited pizza makers.

Gigi's are prominently featured on the website, Italian Made who support Australian pizza makers to strive for AVPN excellence.

Expect a queue.

The only other time I'd seen a line of people this long was in Georgetown, Washington, DC. For cupcakes. I'm not sure I'd wait that long for a sugary treat. I will confess that although the line for the cupcakes was longer than Gigi's, I'm not sure if it equated to fifty minutes in the wintry-fresh air.

We talked about all manner of things as we waited and more often than not I caught myself continuing the conversations of the people behind us. Or maybe we just noticed the same delinquent driving his parents' white Mercedes with the windows down, music blaring and hood draped over his head. He did get everyone's attention as he reinforced his own stereotyped behaviour. Spoiled brat.

The joke was on him. As he drove laps of the block furthering his development of tinnitus, we were edging closer to the front of the queue.

Gigi's create arguably the best pizza in Australia. Are we talking hyperbole here?

Gigi's have been featured in good food guides, but considering the quality of what you'll be putting in your mouth, good is just about the most underwhelming word to have chosen for this quality of food.

First, you order the calzone. Just hold on to something and settle your mind.

Folded in half and topped with fresh tomatoes, the calzone is filled with the highest quality ricotta-style vegan cheese, more tomatoes, eggplant and basil. Close your eyes and allow the perfectly cooked dough melt in your mouth. With each mouthful and breath, your senses will be tickled by the uplifiting aromatics of the basil and brought back down by the earthy infusions of wood smoke.

All Gigi's needed was the perfect pizza. Oh the dolce!

Tiramisu, an Italian classic since the 1960's has been used to keep the clientele of brothels 'invigorated', so to speak.

Gigi's veganised version of tiramisu is infused with coffee and vegan cream that still has both Hayley and I baffled. Replicating the textures and mouthfeel of animal-based products has been mastered at Gigi's. Their passion has translated into hardwork enabling them to have conconcted the most sexually diabolical cake this side of the equator. Beware, the temptress tiramisu.

One slice of dessert should be sufficient for two, but we also opted for a single vanilla cannoli.

Last night we learned that Gigi's had introduced a third flavour of cannoli - hazelnut.

Now, I'm not saying don't try it, but the vanilla has been our favourite. Chocolate cannolis also grace their menu, and it's one of equal quality. However, the simplicity and delicacy of vanilla is very hard to surpass. Use your hands. The hard pastry shell of a cannoli is not conducive to a knife and fork. Just remember to share!

Gigi's don't take bookings.

Is having an enormous line out the door a deliberate way to show the passing foot traffic that Gigi's is the best? It may well be. One thing you can be sure of is the fifty minute wait for pizza is the perfect manifestation of delayed gratification if ever I have experienced it.

Gigi's Pizzeria is open from 6 til 10.30pm seven days a week.
