Pickled Eggplant
This was my first time making this Italian specialty. After many videos and different family recipes, I decided to make some a few different ways, to try it out. They have to stay in the jars for a few weeks before opening, We will see and i will give an update.
Absolutely very interesting recipe. Never tried this with eggplants before, but now I too shall try to recreate something similar.

Here's a tip. After I made two jars with extra virgin olive, I watched a video where the woman says not to use extra virgin because of its strong taste. Her Nona uses sunflower which is light tasting. I didn't, I made two jars with extra light olive also. I shall see in a few weeks
