15 minute Paleo food: Chicory and salmon with dried cranberries and pine-nuts.

This is one of my favourite meals that is very easy to make. It's a one pot dish and in this case for one person.

I don't think it is a very common vegetable outside of Europe, but we eat it a lot in Holland.
It grows in the dark on harvested chicory roots, that have been covered with a layer of soil.
It's taste is a little bitter and it's leaves very crisp. It can be eaten raw in a salad or cooked. It contains a lot of vitamin c, calcium, kalium and iron, vitamin b1 and 2.
In this dish I combine it with stirfried salmon which gives the taste of the dish depth and dried cranberries, which balances out the bitternes of the chicory with it tart sweetness. The pine nuts on the top give it a crunch and a subtle flavour which complements the other ingredients of the dish very well.

The salmon that I used is organic. I would advise you to buy your salmon organic too, as the fish live under better conditions then non organic salmons in salmon farm do. The non-organic fish that are cultivated in a fish farm share very little space in a pond with other fish. They literally swim around in their own excretions and therefore are treated with large amounts of antibiotics to keep them from falling sick. So best to buy organic, or to look for fish caught in the wild. The cheap fish in the freezer section of the super market, is usually caught in the wild, so that is quite a good option.

Even though we've discussed most of the ingredients already, I will give you a list of them below:

Ingredients:

One and a half chicory vegetable ( I hope you can get it in your part of the world)
A small piece of salmon.
1 small onion.
1 cm of ginger.
1 clove of garlic
A few dried cranberries
Some pine nuts
Shoyu ( the watery salty soy sauce without any sugar in it.
Some coriander.
Some pepper.

Paleo doesn't mean that you have to eat a lot of meat or fish, just a little will do and always try to get the best quality ( meaning organic), as this is better for you and the animals and mother nature.

Instructions:

Cut and fry up the onion and salmon.
Cut up or grate the ginger and the garlic.
Add the cut up chicory when the salmon is almost done.
Stir fry and add some shoyu.
When the chicory gets glassy, which will happen within ten minutes, maybe sooner, you can turn off the gass.
Add the pine nuts and the cranberries.
Sprinkle some coriander on the top to finish it off...

And you are ready to sit down and enjoy a delicious meal!
