Ulog No. 46: "TAPSILOG (Marinated Beef, Fried Rice, and Egg) RECIPE"

In one of my previous posts, I shared the recipe of "Glazed 'Non-Hoisin' Chicken Fillets". It was because of @dragraff's #FreshFlavours contest that I was motivated to cook this. The good thing about it was that I was able to utilise some of the vegetables that I had in my fridge, that instead of them going to waste, I might as well add them in my recipe.

It worked! My husband was very impressed and he loved the dish. He said that it was full of flavour and it was not too spicy. It had just the right amount of spices and seasoning. I cooked 5 cups of rice to go with the dish, so as a result, we had so much left-over rice.

I thought, what should I do with the left-over rice? Of course, there's no other way but to transform it into either garlic fried rice or special fried rice. My special fried rice is cooked with some vegetables, bacon, and omelette. This time, I decided to make garlic fried rice to go with this popular Filipino breakfast meal:

What's in the word?

Tapsilog is a combination meal which consists of tapa, fried rice, and egg.

  • Tapa - is related to the Sanskrit term "tapas" which means heat. It is prepared by marinating the beef overnight (see recipe below).
  • Sinangag - a Filipino term for rice fried with garlic and seasoned with salt. The root word is "sa-ngag", which means fried, roasted, or toasted. It is commonly associated with rice (being fried).
  • Itlog - Filipino term for "egg".
Other condensed words to refer to any Filipino combo breakfast meal:
  • TOSILOG - tocino (pickled pork), sinangag (fried rice), and Itlog (egg)
  • LONGSILOG - longganisa (pork sausage), sinangag, and itlog
  • DASILOG - daing (smoked butterflied fish), sinangag, and itlog
  • ISDASILOG - isda (fish, fried), sinangag, and itlog
  • CHICKSILOG - chicken, sinangag, and itlog
  • BANGSILOG - bangus (milkfish, fried), sinangag, and itlog
  • SPAMSILOG - spam, sinangag, and itlog
  • PORKSILOG - pork, sinangag, and itlog
  • CORNSILOG - corned beef, sinangag, and itlog

What's great about any of these combo meals is that it's very easy to prepare and you're able to re-use or recycle your leftover food (especially steamed rice) from the previous day. All you have to do is to fry the meat, the rice, and the egg.

HOW TO COOK TAPSILOG

1. Combine the following ingredients for marinated beef or "tapa", mix well and refrigerate overnight.
Ingredients:
1/2 kilo beef sirloin, thinly sliced
2 tbsp sugar
1/2 tsp ground black pepper
1/2 to 1 cup soy sauce
3 tbsp minced garlic
1 tsp salt

2. Using a spoon or spatula, break down the leftover rice until it's free of clumps. Set aside.

3. Crush garlic and cut into smaller pieces. Set aside.

4. Slice spring onions into thin rings. Set aside.

5. Heat 3-4 teaspoons of vegetable oil in a pan. Fry the marinated beef for 5 minutes or until cooked and tender, then once cooked, set aside.

Note: You can choose not to set aside the beef, and fry the rice in the same pan and mix with beef. Otherise, proceed to next step.

6. In the same pan, add a little bit of vegetable oil and sauté garlic until golden brown.

7. Add rice and mix well. Add salt and pepper to taste.

8. Meanwhile, place a skillet on medium heat. Spray oil. Carefully break eggs and slip into pan one at a time. Cook the egg until whites are completely set and yolks begin to thicken but are not hard.

9. Remove the rice from heat and serve up on a plate. Sprinkle with spring onions or mix well the spring onions with rice.

10. Top with marinated beef.

11. Remove the eggs from pan and place the egg on top of the rice.
12. Optional: The meal is best served with vinegar as dipping sauce for beef or to mix with rice.
