Usually this translates to restaurants in a public square as well as restaurant all along the sea side walk. Local shops selling local produce whether it's leather goods, foods, or whatever memorabilia.
Chania has pretty much all elements of an "islandy old town" which I consider to be important. It has the buzzing market , the restaurants all over the sea front, and it has the buzzing atmosphere from all the people who visit.
