Vegan Week Inspiration - Week 41

It happens quite often that people ask me: "but.. isn't it very hard coming up with dinner every day? I mean... what do you eat? Salads? I can imagine it must be quite boring after a while, living of JUST plants.."

After eating plant based for almost four years, I can promise you that this could not be further away from the truth. I do eat salads, even quite a lot of them. Though I must admit, it is mostly on the side of something else, or it is topped with so much stuff, that it can hardly be classified as salad anymore… Since it is a question that comes up so often, we thought it could be nice to give you a little peek into what a week menu in a plant based life can look like! And hey, why not make it a series?



Since Ambrosia dived into the adventure of sharing here on Steemit, my camera roll (note: my boyfriends camera roll, since I have the worlds dumbest smartphone…) has been piling up with pictures of food, and I have had no clue what to do with all of them (note: my boyfriend is getting tired of them). Since most of them is just random “coming home from work and mashing something together”, I’ve had a bit of a hard time figuring out how to be able to use them all.

But I got the feeling that it is a general hobby of dedicated foodies to scavenge the internet to see what other people like to stuff themselves with. At least it is for me, anyways. It is just something terribly comforting about getting an insight of other peoples daily life and get a little hit of some good old food inspiration. So what do the Ambrosia Cafe crew eat themselves, when they are not cooking for others?

A lot of this is improvised meals, with no specific recipes, but if you find something that looks extra delicious that you would like to try out yourself, let us know and we’ll try to recreate the dish so we can find the measurements. After all, sharing is caring, right?


Monday ~ Pasta with oven baked vegetables and marinated tofu


This is a go-to for me after a long and dry Monday at work! It is so simple, it practically makes itself! Just chop your favorite veggies, cube up a block of marinated tofu, mix it with some nice oil and spices (sweet chili sauce is really nice!) and let it work its magic in the oven while you cook the pasta. Voila, a super simple and healthy meal to start up the week.


Tuesday ~ Oven baked Portobello mushrooms, filled with bulgur and vegetables with a drizzle of cheese, and a tomato salad on the side


Portobello mushrooms is just.. life! Here I've let them hang out in the oven for a while, before filling them with a mix of bulgur, spinach, peas and spices, drizzled it all with some lovely vegan cheese on top, before giving them another go in the oven. Served with a simple, complementary salad of tomato and finely chopped onion on the side. Basil for extra flavor and glam factor!


Wednesday ~ Asian inspired noodle salad with rice noodles, fresh vegetables, fried onion and mushrooms, and crispy tofu


This is a wonderful dish for doing a bit of intuitive cooking. Anything goes! Thinly sliced vegetables, crispy tofu, fry up some onion and mushrooms for a hit of savory, and mix together a nice dressing to go along. I like basing my dressing on mushroom soy, maybe some sweet chili and a bunch of sesame seeds.


Thursday ~ Dhal served with raita, fresh coriander and parsley, and lavash


Mmmmh, dhal! Another dish that practically makes itself, and it is so filling and delicious, not to mention, dirty cheap. Chopped tomatoes, lentils, plus a good load of ginger, garlic and spices. The raita is simply thrown together with vegan yoghurt, cucumber and some herbs. Here served with a extra load of herbs, and lavash (a bread widely spread in the middle east).


Fancy Friday ~ Seitan steaks with mash, mushroom sauce, ovenbaked zucchinis and a fresh salad on the side

I rarely indulge in very "meat like" meals, but when I do, I go over the top.. Some weeks ago my boyfriends sweet mom came over with some seitan steaks from Germany. So I paired them with mashed potatoes, creamy mushroom sauce with a good load of white wine, oven baked zucchinis with grated cheese and a fresh salad on the side. Now thats a good way to welcome the weekend!


Lunch snack ~ Börek inspired pastry roll with spinach filling


I sometimes get really fed up with boring lunches of rye bread (every Danes go to lunch..) or yoghurt with müsli.. then it is perfect to spend a Sunday afternoon wrapping up some pastry rolls to freeze down and quickly heat up during lunchtime. These are filled with a super simple filling of spinach and onion, wrapped like little cigars, and baked in the oven.


As mentioned further up, we have decided to make this a regular post, with a little mashup of dishes that might inspire you to try something new. So stay posted for more "Vegan Week Inspiration" in the future, and have fun exploring the magical plant based world!
