Recipe: VEGAN "CHEESECAKE" with BLUEBERRIES 🍰 [Sugar & Gluten Free]

Hello!

As you saw in the post: My Summer Garden I have a lot of blueberries in this year.  
I appreciate these fruits very much, because they are real superfood. They are one of the best sources of antioxidants  and have anti-inflammatory and anti-cancer effects.

If you like my vegan and gluten free "cheesecakes", try the new blueberry version!

Ingredients:

For the base:

  • 1 cup of dates
  • 2 tablespoon of peanut butter
  • 1 tablespoon of unrefined coconut oil
  • 1 teaspoons of carob
  • 3 - 4 rice wafers 

For the cream:

  • 1 glass of millet
  • 3 glass of vegetable milk 
  • a pinch Himalayan salt 
  •  200 g tofu  
  • 3 tablespoons of unrefined coconut oil
  • a handful of soaked dates 
  • juice from 1 lemon 
  • a cup of blueberries

For the blueberry jam:  

  • 1 cup of blueberries
  • 2 tablespoons of chia seeds
  • 1 tablespoon of ground chia seeds 
  • 3 tablespoons of xylitol

Preparation:

1. Boil the millet:

Pour the millet into a pot and roast for a few minutes while stirring. Then rinse with water. Pour the vegetable milk, add salt and boil. Reduce heat to low and let simmer for 20 minutes under cover (without stirring), until the millet absorb all the liquid. Leave under cover for a slight cooling (until it is warm, not hot).

2. Prepare the base:

Soak the dates with warm water for 30 minutes. Raise the dates and mix in blender. Add peanut butter, coconut oil and carob, mix it smoothly.  

Crumble the rice wafers and gradually add them to dates cream. Mix with a spoon to obtain a dense mass, which we lecture the bottom of a small round baking tray. Put in the fridge. 

 3. Prepare millet cream:  

Add tofu cubes, coconut oil, dates and lemon juice to chilled cooked millet. Mix with a hand mixer to get a smooth cream. Try to make sure that the cream is sweet enough. Add more dates if you need. 

Put the millet cream  into a base. Put blueberries on the cream and press them with a spoon. 

4. Prepare blueberry jam:

Blend blueberries with chia and xylitol. Pour on the cream and align the surface. 

Put in the fridge for 12 hours, preferably overnight.

Did you say cheesecake?? lol I love cheesecake! I had some frozen triple chocolate cheesecake that I made like a month ago. It freezes very well. It wasn't Vegan though. This looks yummy Moni! :)
