#Ulog Ep. 3 Rustic Cooking "Oven Roasted Short Ribs"

I love cooking whenever I have time and some of you may already know that. Most of the time I just try and search for recipes online and just add a little twist of my own. Today I would be cooking a dish which is one of my wife's favorite. She has been asking me to prepare this for days now. Do we have all the ingredients? I searched the refrigerator for anything that I could use. So let's see what we have.


Oven Roasted Short Ribs

To start things off let me just tell you about that oak pepper grinder. I always wanted to have a pepper grinder but I could not get one since budget was a bit tight. It was something I could live without but last December when Steem rocketed I was blessed to have the pepper grinder that I always wanted. Still very thankful and I could proudly say Steemit paid for my pepper grinder. Anyway let's move on here are the vegetables and spices that I found. I got some baby potatoes and a left over carrot which I think is just half of the whole carrot. Three cloves of garlic and a bit of thyme which I found in our spice can. I needed some celery but we ran out but I found some celery powder also in the spice can. I guess that would do.

These baby potatoes we got from the mountains on our trip has been in the refrigerator for some time. It is time to put it to good use.

Now for the short ribs which has been sitting in the freezer for weeks now. My wife has been asking me to cook it but never got to it. This is the time to shine for the ribs and satisfy my wife's craving.

Always season you meat very well and here is the pepper grinder bought with SBD in action. We never buy those pre ground peppers anymore as we have them freshly ground which we love so much.

Season with salt and I make sure that the meat is evenly salted.

Apart from the pepper grinder I also wanted to own a cast iron pan. It is hard to find one here in our country and I searched the malls with no luck. Until I found one also last December in a recently opened supermarket. It was the last cast iron pan and there is no way I was letting it go. Thankful to say also paid by SBD and it could last forever if properly taken care of.

Let's fire it up and start searing the meat on both sides first. We love to have that little bit of crust on the meat which builds up flavor.

Just throw that garlic in that pan to join in the party. If you don't like garlic just skip it if you prefer.

Once the first side is seared just flip each one and get the other side done.

We need to deglaze it and sad to say we have no more wine left. I finished the bottle last time we prepared the

Annato Chicken Adobo.
Let's see what we could use instead. No one wants this unsweetened apple cranberry juice the was sent to us from relatives abroad. I don't like it and the kids don't like it. Maybe they sent it to us because they also don't want it. So let's put it to good use then. It should be good to deglaze the pan and also add some flavor to our meat.

I think I did pretty well as the smell was amazing.

Next we add some beef broth or chicken broth any would do. Not to much though to drown the meat we are not making stew. Around an inch on the meat should do it.

Then we add in the spices the celery powder and the thyme.

This sprig of rosemary I took from my small rosemary plant outside. It's still small but I hope it doesn't mind if I just took a tiny sprig.

Next just dump in the carrots or what is left of it. Would have been nice if we had more but it's better than nothing. Since we just scavenged what we have right now without going to the market to buy the ingredients.

Hey look at that as it is starting to look good to eat already.

Baby potatoes is the last of the ingredients that we have and we need to pre heat that oven.

I love to just dump stuff in the pan whenever I do roasting in the oven. Wait till you see how I roast my chicken. I dump anything I could get my hands on well not exactly all lol. It does look nice does it?

What is this? Liquid smoke which I found at my aunt's cupboard. A bit of smoky flavor that sounds good. Let's do it.

Not too much just a dash would do.

All set cover your pan with foil and get ready to stick it in the pre heated oven.

Leave on high for 30 minutes and reduce heat to medium. We then wait for 2 hours and let it slow cook in that oven. Listen to some music do some comments on some post while you are waiting by the time you are done it should be good.

After two hours.......................are you ready?

Bursting with flavor a delightful aroma would greet you as soon as you open that foil.

Potatoes perfectly cooked and the meat falling off like butter. Most of the fat has melted and some oil can be collected at the bottom of the pan.

Of course I could not help taking some shots first before we dine. I just wish we had some wine to make our meal perfect.

This looks very tasty. I have been wanting to try to make some beef short-ribs for a while now, but I have just never gotten around to it. I might have to give it a go after reading this. Nice pepper grinder. My wife and I love ours. I wouldn't switch back to preground pepper for anything. Thanks for sharing!

Exactly freshly ground all the way. Give the short ribs a go you would love it and I always say in cooking there are no rules lol.

My brother in law and I bought part of a cow a couple of years ago, but they ground all of the rib meat up before I could request the short tribs.

Aw too bad would have been an excellent roast. When you said part is it like a quarter of a cow. Did you have a party or something or a great big cook out?

Yeah, I know, I was kind of bummed. I think it ended up being half of a cow. He took most of the meat though. I bought some of the t-bone and porterhouse steaks and ground meat and he gave me the brisket. I don't eat as much beef as I used to, so I still have a bunch of ground meat in the freezer, but the steaks are gone :)

Sounds to me like you still have a lot of burgers for a cook out. What did you do with the brisket?

I smoked the brisket. I did a post about it a week or two ago. You can check it out on my page. My brother in law was the one in contact with the farmer/processor so he had them cut everything really lean. There is too little fat in the ground meat to make decent burgers. It is good for chili or a meatloaf where you add a binder though.

That smoked brisket sounds heavenly. I will have a look.

Awesome meal @watersnake101! I like how you can come up with something delicious with things that you have on hand. I love fresh ground pepper too. You can't beat the flavor and aroma! I was a very wise investment for your steem!

Some days when there is not much you just have to make use of what you have. Still remember when there was no dinner yet what we had in the refrigerator was two eggs some tomatoes,onions and a can of tuna. The result the most amazing tuna patties that everyone enjoyed. Ah the pepper grinder I look at it everyday while on the dinner table and tell to myself this was a gift from an amazing platform and community.

I always have some cans of tuna, clams and tomatoes in the pantry for those days too!
