My personal favourite of the evening with an explosively rich taste mixed with the scintillating acidity of the quince apple. Notice the portions are small and the dish is served in a bite size. This is because each dish is suppose to be tasted and not devoured.

Aromatic herbs, pine nuts and currents not only decorate the Quince apple but add's to the exotic taste. The sauce is a currant that is flavoured with grape molasses. Slightly sweet to counter the savoury blend of minced lamb and rice inside the quince.
