✅ What is the name of the dish that you have made this week? And why did you choose this dish?
The dish I made this week is Ofeakwu/Banga soup. This is one of the highly valued dish in Igbo tribe in my Country Nigeria. The preparation has a whole lots of process.
I choose to prepare this meal on Sunday because, it's been a while since we last made the dish in my house, this is because the main ingredient which is the Palm fruit is quite scare in the market currently even when you see it, it is usually expensive. This is because it's not yet the season. The palm fruit we used in preparing this dish was gotten from our Land in the Village.
✅ What is the process of making it? (Share steps with ingredients)
Ingredients used in Making Ofeakwu
Palm fruit
Pumpkin and Scent leaf
Stock and dry fish
Pepper
Crayfish
Onions
Salt
Seasoning cubes
Procedure for making Ofeakwu
Wash and put your palm fruit in the pot
Add enough water to the pot, then boil until it's tender.
When it's tender enough, put it in a mortal and use pestle to pound.
Pound very well, until the palm fruit separates from the palm kernel.
Add water, use your hand to mash and squeeze the palm fruit in order to extract the palm juice.
Use sieve to extract the Palm juice.
Add the palm juice to the pot and cook.
Add your grinded crayfish and pepper to the pot.
Add the washed stock and dryfish to the pot.
Add salt and seasoning cubes to taste.
Cook for a while.
Add vegetables and cook for about 7minutes, stir and turn off the heat.
Your delicious Ofeakwu is ready.
It can be eaten with boiled rice or yam. Some people also have it with swallow.
I had mine with boiled rice.
