I didn't watch the whole video, but regarding the chickens, yeah. There are different levels that mean different things, and people don't generally know the difference. Of course, it's best if you can get them from a local homesteader type person like @lyndsaybowes, but if that's not possible, the terms (at least in the US) are:
cage free: less space per bird than battery cages, but all grouped together, always inside
free range: a mix of inside/outside, a bit more space
pasture raised: much more space, always outside except maybe in inclement weather
...and then of course, no label, is probably battery cages.

Pasture raised eggs cost upwards of $7/dozen most of the time, unless you catch a sale or something, here in Denver.

Similar here - although many variations on what free-range means. I tend to use the independent butcher in Queen's Road - you can go and see the chickens where they are reared. We also have a farmers' market once a month including Pick's Organic Farm. I love visiting that farm.
