Honey Press

Today was the payoff - 13 frames of honey.

This is an antique fruit press that my father-in-law gave to me. Pressed honey has more pollen in it than extracted honey. Many of the people who buy honey from me want the pollen to keep their allergies under control. I think it also adds some flavor, too.

I cut the comb out of the frames with a knife and try to cut open most of the cells. The pieces of comb are loaded into the press and squeezed until the honey runs out. The press can do 6 to 10 frames of honey at a time.

There is a strainer on top of the bucket to strain out pieces of wax. I will keep the bucket warm for a few days until the wax floats to the top of the bucket, then I'll fill the jars using the honey gate on the bottom of the bucket.

For best flavor, honey needs to be fully ripe and it needs to be handled carefully. It absorbs moisture and flavors from the air, so it should be kept covered until it can be bottled. Liquid honey is easier to strain and bottle if it is warm, but it shouldn't be heated above about 80F. Higher temperatures drive off the volatile compounds that give honey its distinctive aroma and flavor; they also break down the proteins that give honey its medicinal effect.

One of the benefits of being a beekeeper is getting to enjoy all of the different types of honey that come from the hive. Some frames are light and floral while others are dark and fruity.
