Back in Georgia Again
Today was my first day back from California, where my husband and I spent the holidays with children and grandchildren. We had a great time visiting family members and ex-co-workers. It was really hard maintaining my Paleo diet, with the dinners, lunches, and breakfasts that we were invited to. With God's traveling grace and mercy, we are home , safe and sound without gaining a pound.
Three weeks away from home means that our refrigerator was just about empty. But I managed to find a few carrots in the refrigerator, salmon and broccoli in the freezer. So tonight I prepared my Herb Crusted Salmon and Steamed Broccoli & Carrots in a ghee and garlic sauce.
Salmon is served frequently at our house, whether it is herb crusted, blackened, or just simply broiled. Salmon provides a number of healthy benefits, plus it is delicious. Salmon promotes hearth health, is rich in vitamins and minerals, defends against cancer, boost immunity, promote healthy bones and joints just to name a few.
Herb Crusted Salmon
Ingredients:
4 pieces of salmon
1/2 cup EVOO
4 tbsp. minced garlic
4 tsp. paprika
4 tsp. onion powder
2 tsp. sea salt
Dash of cayenne pepper
Black pepper
Organic no salt seasoning , Kirkland brand.
Directions:
Pre-heat oven to 380 degrees Fahrenheit. Place salmon in glass 13 x 9 dish. Sprinkle olive oil over each piece of salmon, spread minced garlic on each piece then add the rest of the seasoning ending with the Organic no salt seasoning. Sprinkle more olive oil on top of salmon.
Bake in oven for approximately 15 minutes or less, according to your taste.
While salmon is in oven prepare the Broccoli & Carrots.
Ingredients:
1 pkg. of frozen broccoli
5-6 small carrots
3 tbls. Of ghee
2 tsp. of minced garlic
2 tsp. of Knorr chicken bouillon
Directions:
Steam carrots and broccoli until tender, remove from heat. Melt ghee in pot, add bouillon and stir to combine, then add garlic and cook until soft and slightly brown. Add vegetables to garlic sauce and stir.
This was the our first dinner of the new year at home.

Your salmon looks delicious. I also eat a lot of salmon. I am not familiar with the Kirkland no salt seasoning. I’ll have to look up the ingredients because I like cooking with no salt or little salt.
Your food is healthy and pretty. I have not used Evoo before. How does it taste?
@pyemoney, I am so sorry, I forgot to put the periods in between the E.V.O.O., extra virgin olive oil.
LOL... I should’ve figured that one out. I use extra-virgin olive oil so much.
