Baking Zopf after a while / 久しぶりのツォプフ

Cold days made me bake Zopf after a while (or the woven style wise Challah). For me fluffy Zopf with plenty of butter and berry jam is an autumn/winter taste.

The recipe I use is a hybrid recipe made out of a German new year's brezel recipe and a Japanese cinnamon roll recipe with a fluffy masala, tapioca flour. I wish I could formalize it one day ...

As the dough contains 5g of yeast for 300g flour, it rises quickly. It's done in 2 hours.

Its shaping process is the fun part. As the dough is not sticky and easy to handle, I can focus on weaving them.

There are many ways to weave the dough. Be careful to start seeing them on Google image search. I can easily spend hours to scroll the result all the way down ... dangerous!

I had a slice with my daughter in the coffee time. I look forward to having some more for tomorrow breakfast.

さっそくパンを焼く人たちの意見を聞いて作った #breadbakers タグを使ってみます。

ドイツは寒い日が続いて、久しぶりにツォプフを焼きました（成型のスタイルはユダヤ教の人たちのハッラーみたいですね）。私にとって、ふわふわのツォプフをちょっとあたためてバターとジャムをたっぷり塗って食べるのは秋冬の味です。

レシピはドイツの新年のプレッツェルのレシピとかもめ食堂のシナモンロールのレシピのハイブリッドで、そこにドイツの小麦粉では出にくいふわふわもちもち感をタピオカ粉で加えて・・・とごっちゃりしていていつかきちんと書き残したいです。

生地はイースト多めですぐに発酵するので、1次発酵、2次発酵含め2時間ほどでできあがります。

このパンの楽しいところは成形の生地を編む部分で、今日は丸型にしてみました。べたべたしない生地なので純粋に成形を楽しめます。

インターネットで探してみるといろいろな編み方が出てきます。が、パンを作るのが好きな人は1時間でも2時間でも延々見てしまうかもしれず、ある意味危険です。

久しぶりに焼いたツォプフ、腕は落ちていないようで子どもとおやつにおいしく食べました。明日の朝ちょっとあたためてバターとジャムをたっぷり塗って食べるのが楽しみです。
