Garden Fresh Veggie Fritters

My mom gifted us a new harvest basket! I absolutely LOVE it! I wanted to put it to use so we went out to the garden to harvest some fresh goodies to make veggie fritters for brunch!


Veggie Fritters are an absolute hit with everyone we have made them for. It's a great way to get some fresh veggies into those picky eaters you might have too! You can make veggie fritters with just about any veggies you have in the garden....there is no set rule or recipe. I'll share with you our favorite version and what we used in ours today!

-shredded potatoes
-shredded carrots
-shredded yellow squash
-chopped kale (stems removed)
-chopped mustard greens (stems removed)
-chopped green onions
-finely chopped garlic
-finely chopped fresh dill
-eggs
-panko breadcrumbs
-feta cheese
-white pepper
-onion powder
-garlic powder
-sea salt

Mix all the veggies in well. In a separate bowl, whip the eggs and spices together. Pour the egg mixture into the veggie blend and mix well. Fold in your panko breadcrumbs and feta cheese.

Pre-heat the oven to 425. Make patties out of the mixture and place them on a well-greesed baking sheet. Use a pastry brush to gently brush a little oil on top of the patties.

Bake for 15 minutes on each side. Remove from the oven, allow to cool for about 3 to 5 minutes so they don't crumble when you serve them. Enjoy! These are fabulous by themselves or could be served with a nice yogurt tzatziki sauce to dip in. These are so so fresh and just absolutely fabulous. Well worth the effort in the kitchen.
