Crema de Aguacate
Ingredientes
5 tazas de caldo de res, pollo o verduras
1 papa grande pelada y cortada en trozos grande
1 rama de apio
1 rama de perejil fresco
3 aguacates maduros
1 cucharadita de jugo de limón
Sal y pimienta al gusto
Preparación
Ponga a calentar el caldo en una olla a fuego medio y cocine la papa con el apio y el perejil por 10 minutos o hasta que la papa este blanda. Licue la preparación y reserve, Pele los aguacates y córtelos en trozos pequeños. Licúelos con un poco de caldo y mezcle el puré con el resto del caldo. Póngalo a calentar a temperatura bien baja por unos minutos y agregue el limón y un poco mas de sal mas sal y pimienta si es necesario, Sirva inmediatamente acompañado de pan frito o patacones de `plátano verde
Una vez ha agregado el puré de aguacate al caldo, debe evite que hierva o se caliente demasiado porque se puede cortar.
