It is believed that ravioli was invented in China. They were brought to us because of the Urals in the late XIV century. The Finns, who were heading West, stopped for a while in the Urals, where they shared with the locals a dish in which pieces of meat were wrapped in thin dough. The classic filling for the Ural dumplings is prepared from three types of meat: 45% beef, 35% lamb and 20% pork. But now the filling for dumplings is made from anything: mushrooms, sauerkraut, turnips, berries, fruit, game, fish. Dumplings are boiled, stewed and baked, served with various sauces, sour cream and butter.
Dumplings with pink salmon
Ingredients: 1 kg of pink salmon fillet, lemon, 2 onions. For the dough: 3 cups flour, 1 tsp salt, 1 Cup water.
Method of preparation: add salt to the flour and gradually add water. Knead the dough. Fillet of pink salmon can be cut with a knife or minced in a meat grinder. Who likes the stuffing fatter, you can add the fat scrolled in the meat grinder. Also grind two bulbs. In the finished minced meat can drop a little lemon juice, add salt and pepper. To when cooking dumplings do not fall apart, the edges of the dough should be lubricated with water or egg white and connect. Dumplings can be frozen or cooked immediately. Fish filling can be made from pike and perch, catfish, chum, salmon and trout. In 100 g about 180 kcal.
Dumplings with mushrooms
Ingredients: pelmeni dough, 500 g of champignons, 2 onions, salt, pepper.
Method of preparation: chop onions into small cubes. Mushrooms chop. If the filling are dried mushrooms, they need to be pre-soaked for several hours and then boil. First, fry the onion in vegetable oil until it becomes transparent, then add the mushrooms. When the mushrooms are cooked, they need to be salted, pepper and grind in a blender. Cook the dumplings in boiling salted water for about 10 minutes.
For mushroom filling, you can take any mushrooms, both fresh and frozen or dried. In 100 g about 190 kcal.
The sauce for the dumplings
Siberian: 1 glass of sour cream, 200 g of salted mushrooms. Mushrooms cut into small pieces and combine with sour cream.
Sour cream: 1 Cup sour cream, 1-2 pickled cucumbers, greens, 30-50 g of hard cheese. Grind cucumbers, green chop, grate the cheese. All the ingredients to combine. You can add a garlic clove.
Yogurt: 1 Cup of natural yogurt, ½ bunch of mint, ½ tsp black pepper, ½ tsp salt, 4 cloves of garlic. All grind and connect.
