Qikou old town, Shanxi, China 中国山西碛口古镇┃月旦评

碛口古镇位于山西省临县，因黄河大同碛而得名，享有“九曲黄河第一镇”之美誉。其主要景点有“古镇风韵”、“水旱码头”、“卧虎龙庙”、“黄河漂流”、“二碛冲浪”等。镇内的西湾村是首批中国历史文化名村。

The Qikou old town is located in Linxian, Shanxi Province. It is named for the Yellow River moraine and also enjoys the reputation of being named the "Jiuqu Yellow River first Town".

The main scenic spots are the charming ancient town, the "flood and drought wharf", the "lying tiger dragon temple", the "yellow river drift", the "two moraine surfing" and so on.

臊子碗凸：

1. 将碗置锅内蒸热
2. 再擦去碗内蒸气凝结成的水珠
3. 将荞面糊舀入碗内
4. 上锅，以大火猛蒸
5. 二十分钟左右便趁热取碗出锅
6. 把未凝的糊糊均摊到碗内边沿
7. 置阴凉处自然冷却，即成碗脱
8. 出锅后辅之以辣油、芝麻酱、老陈醋为佐料，另加一勺臊子（方言，由海带、粉条、黑豆等调制而成的小菜），吃起来黏而不绵、厚香适口。
