竹昇麵 Bamboo Pole Noodles

非常喜歡吃竹昇麵,這種甚有特色的廣東麵食,也是手工製作。為了那彈牙的口感,老師傅會在由鴨蛋、麵粉搓成的麵團上以大竹竿加上自己的體重反覆彈壓超過半小時,再做成細麵。

幸運地,在長安長盛新村新開了一家竹昇麵,特意來嘗嘗。麵質彈爽,麵線偏細,我雖更偏愛略微粗一點的麵條,但這也不失為好的竹昇麵。另外點提,那湯底非常正宗!

I really enjoy Bamboo Pole Noodles (Jook-sing Mein). This is a kind of special Cantonese noodle which is still hand-made with real traditional taste. To gives its most distinctive extreme elasticity, the noodle maker would bouncing himself for more than half hours on the noodle dough mixed by flour & duck eggs, then making into thin noodles.

Fortunately, a new boobam pole noodle has opened in Changan, so I came to have a try. The signature elasticity is there, but the noodles are rather thin. I would rather enjoy slightly thicker noodles, but this one is not bad. By the way, the soup is very traditional wonton soup.
