It's salted eggs. The eggshells are dyed red for the buyers to know it is salted eggs and not regular eggs. We accentuate salted eggs with tomatoes and onions and pair it with dried fish. The dish therefore is too salty. We have a vinegar dip with chillis if you would love it sour and spicy.
