The steamer is working overtime today at my Thai friends’ house. I showed you the top view recently with veggies cooking in the upper tray and fish in the second level. A lot of food can be cooked very quickly in this set up.
The fire is in something that looks like volcanic rock to me, but I am not sure. This fire is always going for the meals we eat. Charcoal is started with propane but no food is put on it until the propane burns off and the charcoal is burning well.
My friends tell me never to cook over propane for reasons of health. Charcoal is better. If I was ever able to do this trick on my own, I will remember this tip.
If you look in the background in this shot, you can see one of my friends squatting comfortably on the ground cutting banana leaves for another part of this meal. This is a trick I will never be learning. I can do squats, but mine stop at a much higher level and I am not able to do anything else at the same time.
