PORK MENUDO - A Well-Liked Menu & Always Present During Fiestas
PORK MENUDO - is one of the many delicious Filipino dishes that makes use of pork, liver, hotdogs, and vegetables such as bellpeppers, carrots and potatoes. It is usually served during celebrations of Fiestas, Birthday parties, and all the like. No wonder, it's one of the most favorites and very well-liked dish loved by Filipinos.
Ingredients:
- 2 lbs. pork
- ¼ lb. pork liver
- 2 pcs. potatoes (diced)
- 1 medium carrot (cubed)
- 1 piece bellpepper (sliced)
- ½ cup soy sauce
- 1 cup vinegar
- 1 small onion (chopped)
- 3 cloves of garlic (minced)
- ¾ cup tomato sauce
- 1 cup water
- 4 pieces hotdogs (sliced diagonally)
- 2 tablespoonful of sweet & dried raisins
- 2 tablespoons cooking oil
- Laurel leaves
- 1 teaspoonful sugar
- iodized salt
- ground pepper.
Procedures:
1.) Combine sliced pork, soysauce, and vinegar in a bowl. Set aside and marinate for at least an hour.
2.) Heat oil in a pan then saute both the garlic and onions.
3.) Add the marinated pork. Cook for about 5 to 7 minutes.
4.) Pour-in tomato sauce and water. Let it boil and simmer for 30 minutes to an hour depending on the toughness of the pork. Add water if necessary to avoid overcooking.
5.) Add-in the sliced liver and hotdogs. Let it cook for another 5 minutes.
6.) Put-in sliced potatoes, carrots, and bellpepper.
7.) Add sugar, iodized salt, and ground pepper for added flavor. Stir and cook for 8 to 12 minutes then put-in Laurel leaves and the raisins as it cooked.
There you have it! A very delicious Pork Menudo....
