煲仔飯,顧名思義,就是用小煲仔煮的飯,大概是廣東特有的吧。

廣州有許多賣煲仔飯的小店,壹般是開在路邊,壹排竈頭上擺滿冒著熱氣的煲仔,

壹個師傅手持竹筷來回巡視,好象圍棋中的車輪戰。這樣的排檔壹般都是專賣,

另外還會送例湯。廣州街上最多的 “粥粉面” 店,其次是甜品店,再有可能是煲仔飯小店了。

雖然獨沽壹味,但品種也可以有幾十種之多,好吃而且不貴。

煲仔飯,是廣州地區的特色美食,屬於粵菜系。

品類主要有臘味煲仔飯,香菇滑雞煲仔飯,

豆豉排骨煲仔飯,豬肝,白切雞等。

將泡淘好的油粘米放入瓦煲中,量好水量,加蓋,

把米飯煲至七成熟時加入配料(臘味,香菇滑雞等),再轉用慢火煲熟。

店家還會配壹碟配制的生抽,淋在飯中,香氣四散。

用瓦做成的 “煲”,在火候控制方面比較靈活,煲出來的飯齒間留香,回味無窮。

吃煲仔飯時,記得嘗嘗飯焦的味道,又香又脆。

這個時候趕快把肉,姜絲放進去!要快!

3,肉放好後,放姜絲,再打個蛋。蓋上蓋,換最小火,再煮三四分鐘。

關鍵時刻來了!關掉火,讓煲仔飯焗十五分鐘。

不要再打開蓋來看哦〜這是煲仔飯最關鍵的時候,焗的時間不夠飯就生了,而且很難再挽回了。

4,耐心地等待十五分鐘後,香噴噴的煲仔飯就做好了!
