Something Sweet - Day 2

One of the most famous French desserts, in its traditional form, is the eclair.

Wikipedia defines: "An éclair is an oblong pastry made with choux dough filled with a cream and topped with icing".
However, the definition of Wikipedia doesn't do the eclairs justice. Over the past few years, the eclairs have undergone a revival in Paris and France as a whole, and from rather boring-yet-delicious chocolate elongated pastries, they have become... well, everything, basically.

One of the markers of the great eclair revival was the opening of the store (which is now a rather large chain of stores) L'éclair de génie, by the chef-patissier Christophe Adam, who has had enough working for the famous macaron chef Pierre Herme, and instead decided to put his focus into another dessert. And that he did, very successfully.

Today you can find, in many patisseries in Paris, eclairs in various colors and flavors, some more classic (caramel, chocolate, coffee, vanilla), some in more exotic flavors (lemon, passion fruit, raspberry, pistachio), and sometimes you can also find special, seasonal eclairs. One time I bumped into a blueberry eclair, and I just fell in love. I'll find its photo and upload it to my blog sometime.

In short, eclairs. If you ever find yourselves in the presence of one, and you've never tried it before - please do.
