Our body produces fat when the pancreatic production of @insulin exceeds normal levels in the blood. Every time this happens, it activates the production and the storage of @fat, even many times in the same day. The introduction of high-density glycemic @carbohydrates (wheat-derived, starch in general, sugars), produce very often an excess of insulin and consequentley fat storage. In few words, it is not important to focus on the amount of food introduced but on the glycemic load of that @food. If the amount of food is high but the @sugars are absent (as in much of the @vegetable and animal foods), it does not produce excess of insulin (and therefore fat storage) in the most of cases. If the amount is reduced but the sugars present (as in the wheat-starch derivatives in general, in @desserts, in many @fruits and in some vegetables), the insulin produced by the @pancreas makes you overweight. So gaining weight from fat storage is owe to the choice and not to the quantity of food introduced.
