Harvesting in the snow will allow far too much moisture in the yield which will cost a lot of energy more to dry. Unfortunate. However, when you contract harvesters you have to wait your turn.

What, did they lazy? Who harvests wheat in October? That should have been long ago.

the time to harvest wheat kinda depends on where you are.
early in the south.
Later the farther north.
(note: calling a north dakota farmer 'lazy' to his face might not be the best thing to do)

Hey, we’re not far from Canada here in MN, we got our wheat off in August. I asked my husband why there’d be farmers in ND just harvesting wheat now. He said, and I quote, “I don’t know, probably because they were too lazy to get it off.” Bahaha! Nah, maybe they had too many acres and it got wet on them. Who knows.

most if the wheat is harvested but lots of corn soy and sunflowers to harvest yet.

Stock up on flour and prepare to knead some dough if you don't want to pay two times as much on bread :O
