Stewed chicken with olives

Ingredients

• 2 tablespoons of vegetable oil;
• 2 green bell peppers;
• 1 onion;
• 3 cloves garlic;
• salt - to taste;
• 2 teaspoons ground cumin;
• 2 teaspoons dried oregano;
• 1 ¹/₂ kg chicken broth without bones;
• 170 g of tomato paste;
• 50 g cherry tomatoes;
• 200 g of olives stuffed with pepper;
• 1 tablespoon white vinegar;
• a few twigs of parsley.
  
  

Preparation

In a deep frying pan, heat oil over medium heat. Lay the peppers and onion, chopped garlic and ¼ teaspoons of salt, cut into small strips. Cook for 10 minutes, stirring occasionally. Add the cumin and oregano and mix well.

Cut the chicken meat into large pieces and put it in a frying pan. Pour the broth mixed with tomato paste. Season with salt to taste. Reduce heat and bring to a boil. Then cover the pan with a lid and put it in a preheated to 180 ° C oven for 2.5-3 hours, until the meat becomes very soft.

With a fork, divide the meat into pieces, add olives and cherry tomatoes cut into slices, vinegar and chopped parsley. The dish goes well with cooked rice.
