I found a recipe for vegan muesli bars, but they do not taste the same.......

..... as the vegan muesli bar I ate at the coffee shop in the Kawana Shopping Centre. What a bugger! Isn't it always the way? Here is that heavenly bar.

Finding a recipe online was a journey, read so many of them and ended up doing my own putting various ingredients that I liked and had in the pantry. It took me 10 minutes to prepare and 20 minutes of cooking in a moderate oven at 180 degrees Fahrenheit.

I placed the following ingredients in a food processor for 3 minutes:

1 ripe banana
1 cup of dates after soaking them in water for 20 minutes
I cup of walnuts
1/2 of dried fruit - cranberries and currents
1/4 of peptia seeds
1/4 teaspoon nutmeg
2 tablespoons of golden syrup
1/4 teaspoon of vanilla essence
1/4 teaspoon salt

After 3 minutes of processing I poured the mixture into a bowl and added 2 cups of rolled oats and a 1/4 cup of water.

I then formed the mixture into 11 bars and baked in the oven.

The bars are tasty and will enjoy eating them, but nothing like the bars at the coffee shop. It is back to the drawing board to try another recipe. I am not admitting defeat yet.

Haha! howdy angiemitchell! well at least this journey is filled with healthy snack bars, I think you'll succeed and when you do we won't have to go through all that research and trial and error! Because you'll do a post about them right?

Hi @michenilles, what a great idea, they are full of fantastic energy food. But, next time I won't use an over ripe banana. Haha, it is all trial and error.
