Hi, Steemians!



There are hot days when the appetite becomes so lazy. In this fine weather there is a wish to walk as much as possible, instead of to stand at a plate. And especially do not want to eat something hot and heavy. In this case I have a time-tested recipe easy cold soup. What you need in the heat! This soup is very refreshing, and just love it all. Try it and you'll become like me a fan of this kefir soup.

Kefir soup "Okroshka"


Ingredients:


  • 1 liter of kefir (or liquid natural yogurt),
  • 3 boiled potatoes,
  • 1 large cucumber,
  • 200 grams of ham (or boiled chicken breast),
  • 2 boiled eggs,
  • 5-6 pieces of radish,
  • a lot of greens to your taste (onion, parsley, dill, celery),
  • salt and spices to taste.

Cooking:


1. Cut small pieces of vegetables, eggs and ham.
2. Mix the chopped ingredients, salt, add spices to taste.
3. Fill the ingredients with kefir.
4. Cut the greens and add in soup.
5. Leave in the refrigerator for 1 hour and enjoy the fresh and original taste of this dish.

This is my favorite soup since childhood! It is especially tasty for me at the beginning of summer, when the first vegetables grow in my garden. Radish and fresh green onions straight from the garden - it's incredibly healthy and appetizing.

There are various ways of making this soup. Not only kefir can be used. Also prepare this soup on a vegetable broth, meat broth with sour cream, mayonnaise and Apple cider vinegar. The most ancient recipe for making Okroshka involves the preparation of soup on bread kvass (a drink made from bread and wort). But my favorite is kefir soup.

Kvass soup is amazing to me. I saw this soup at my grandmother's, and after much persuasion I decided to try it. But... You know that... So unusual. Generally, if you are interested in traditional native Russian cuisine, then you need to try okroshka with kvass. But personally I vote for a modern recipe with kefir or broth.

I love this soup with dark rye bread. This is so creates a special rustic flavor). "Okroshka" for me, one of the symbols of the summer village, full of the smells of the fields, forests, freedom, and the chirping of birds. You planted your vegetable garden, and it gave you fruit so that you could enjoy the taste of life, the taste of your work. But even if you bought vegetables in the store, this soup still creates a special mood. I have so this is happening)

Ask any Russian what his favorite summer dish, and he will answer Okroshka! This is really a Russian dish, which has an ancient and long history.
