This looks really fantastic. I am okay with mushrooms and spinach, so I don't really see a problem with this dish at all. I need to start cooking with wine a little more than I have in the past. I also need to start exploring some more vinegar type flavors. My wife and I had some brussel sprouts with a balsamic glaze on them this weekend and they were fantastic!
