Watermelon and Berry Salad with Granola
▫️1/4 cup hazelnuts
▫️1/4 cup rolled oats
▫️1 tsp chia seeds
▫️1 tsp honey
▫️1 cup watermelon, peeled and thinly sliced
▫️1/2 cup fresh or frozen raspberries
▫️1/2 cup strawberries
▫️2 teaspoons mint leaves, chopped
▫️2 tsp lime juice
▫️2 tbsp reduced-fat Greek natural yoghurt
Preheat oven to 180C.
Spread the hazelnuts, oats and chia seeds over a lined baking tray and drizzle with honey.
Bake in oven for 8-10 minutes or until toasted, stirring occasionally.
Place the watermelon, raspberries, strawberries and mint in a serving bowl.
Squeeze over the lime juice.
Sprinkle over granola mix and top with yoghurt to serve.
