Cool-a-Thon Meal 2 - Turkish Lentil Soup with recipe

This Turkish Lentil Soup was the second meal we cooked up in our epic Saturday cook-a-thon. I went to Istanbul years ago and had the best Turkish Lentil Soup ever at a restaurant called Doi Doi. This came a close second.

Here’s the recipe:

1 large onion
6 cloves of garlic
4 cups or Chicken stock
2 cups of lentils
A 24 ounce can of crushed tomatoes (we like the roasted kind)
A tablespoon of paprika
Cumin and cayenne to taste
Lots o’ Black pepper
Salt

Soak the lentils for a bit.
Sauté the onions and garlic for 10, then add the rest. Cook for 30 mins then use an immersion blender to make it smooooooth (but not too smooth)

Ding. It’s that easy.

Delicious.

It looks delicious and easy to make! I can almost smell the cumin, @dougkarr! And the best thing about soups is that they're usually made with so few ingredients and you can eat them in cold or hot seasons. In my country there is a version of this soup that is eaten on Christmas Eve, but it is made with lentils and smoked vegetables. It's finger-lickin'.
