My dear foodies,

When we talk about Italy we think about Pizza, pasta, but there is really a dish in the country in the form of a boot that is eaten more culturally and is much more popular in the cuisine of each region, it is the polenta, a dish based on corn that was very prepared in one of the humanitarian crises that humanity has lived, the Second World War. Although it is not only prepared in Italy, countries such as Austria, southern France (Corsica, Nice, and Savoy) and Switzerland, the island of Madeira, where it is called milho, and the Balkan peninsula (Bosnia, Croatia, Slovenia, Serbia, and Romania are consumed with equal regularity.

Its origin dates back to the time of the Roman Empire, was prepared with chestnut flour, rye flour, and spelled an ancient crop related to wheat, being the thick corn flour the most used today.

So let's get to know how to prepare this rich recipe, which shows that polenta as other dishes could be considered vegan food since usually no meat is added and its ingredients are of vegetable origin.

(for 10 portions):

♡ 250 g Santiveri Bio Instant Polenta

♡ 750 ml vegetable stock

For the tomato sauce:

♡ 200 g can crushed tomato

♡ 150 ml vegetable stock

♡ 15 g brown sugar

♡ 10 ml vinegar

♡ 4 apricots

♡ 4 fresh basil leaves

♡ 1 pinch of salt

♡ 1 pinch of white pepper

PREPARATION

Preparation time: 25min
Cooking time: 25min
Total: 50min

In a saucepan boil the broth. When it boils, add the polenta, stir and turn off the heat.

Line a rectangular mold with baking paper or film and pour in the polenta. Spread it evenly over the entire surface and let it cool in the fridge.

While the polenta is cooling, prepare the tomato sauce. In a saucepan pour the broth, tomato, sugar, vinegar, and apricots. Cook over medium-low heat for 30 minutes. After this time, grind until a sauce is obtained. If you want a
thicker sauce, let it cook a little longer. Add salt, pepper, and chopped basil.

Cut the polenta into rectangular pieces half a centimeter wide and thick. Pass the polenta fingers through the frying pan
with a little oil, leaving them to brown on each side.

Serve the polenta fingers with the tomato sauce.
