My secrets INGREDIENTS

(for 3 portions):

♡ 3 Round zucchini

♡ Rice, ½ glass

♡ Red pepper, 1 small

♡ Onion, 1 small

♡ Vegetable broth, 1 glass

♡ Paprika

♡ Extra virgin olive oil, 2 tablespoons

♡ Salt

PREPARATION

Preparation time: 20min

Cooking time: 50min

Total: 70min

The first thing we will do is preheat the oven to 180ºC to prepare the gratin of our zucchini.

Then we will proceed to wash and dry our round zucchini very well, and then cut the top of the zucchini in order to extract the seeds and pulp, remove as much as we can, but leaving a margin of 5 millimeters on the edge. The pulp and seeds will be reserved.

Then we will put to bake for about 10 minutes, each zucchini are their respective lids.

While our zucchini are cooking a little, we will proceed to prepare the filling.

In our best frying pan we will heat it with a generous jet of olive oil, we will put to medium fire and we will fry our pepper next to the very fine chopped onion.

When they are half cooked or when it begins to crystallize the onion we will add the pulp of the zucchini, previously it is necessary to cut a little finer the zucchini, to high fire we continue cooking, the idea is to dehydrate the pulp of zucchini that contains enough water, when this happens we will add the broth of vegetables and we will let it boil.

Next and very important we add the rice, this can take us approximately 15 minutes, we do not want to cook completely the rice since it will be finished cooking inside the zucchini.

When the time comes for the rice, add the paprika and proceed to fill the zucchini, do not forget to place the lid of the zucchini, continue baking for the same amount of time they were at the beginning, 10 minutes at 180 º C, the time may vary depending on the thickness of the zucchini.

Southern USA. I've seen loads of round squashes but never zucchini.
