This soup is ideal to prepare it in autumn weather, but you can still prepare it at any time of year, especially if these colds will serve to relieve symptoms, nothing like a hot drink, in this case, a delicious soup.
The first step will be to wash our vegetables very well, I advise you to always wash the vegetables very well due to certain agro-industrial chemicals that are stuck or bacteria that can put our health at risk, if you buy organic vegetables much better.

After washing the next step will be to peel and cut all the vegetables into small pieces similar to a die, ideally everything is the same thickness, but you can play with this so no problem.

Then we choose the best pot or saucepan, and preheat to pour a generous stream of oil, then incorporate the vegetables to sauté for only 5 minutes over medium heat, add the tofu, and then mix with water, wait until it reaches the boiling point and cook until the vegetables, in general, are cooked. It is not necessary to spend much time I like them tender.

The next step will be to choose a bowl where we place the miso, incorporate 3 tablespoons of vegan vegetable broth and stir until dissolved well, then throw it into the soup that this list we turn off the fire, and as an optional step add the vermicelli noodles and with only 3 minutes will be hydrated and ready to serve.
