Fish escabeche for dinner

Escabeche is very known in latin america. The fish is marinated and cooked in acidic mixture. The flilipino style of cookong escabeche is one of my favorite food of all time. One of the best fish for this dish is the red snapper fish. It is locally known as katambak. The sourness and the sweetness of the mixture compliments well to the red snapper fish.
